Iranians eat their own bread!

In the current year Iran reached self-sufficiency in producing wheat again. There were 13.5 million tonnes of wheat harvested this year.bread

However, the yield of wheat production per hectare in ten years has been reduced.

Based on how wheat produced, it is divided into two types: when rain is the only source of water which is called “Deim”, and when irrigated regularly by farmers.

Both types of wheat cultivation were down by 5% compared to a decade ago.
Apart from having less rainwater over the last years, the total fields under cultivation has also decrease by 1.1 million hectares in ten years and  has reached 5.7 million hectares this year.
More than 70% of the total wheat produced in Iran is used to produce bread. On average bread forms 1.2% to 1.7% of Iranian households’ expenses.
About seven years ago a piece of bread would cost 3616 IRR, when 1 USD was 9894 IRR.
Today the same piece of bread costs 4290 IRR and 1 USD officially is equivalent to 31565 IRR.
During the presidency of Mr. Ahmadinejad, the Government decided to increase the number of industrial bakeries in Iran. The goal was to produce 40% of the total bread industrially. This figure today is 0.65% of the total bread produced in the country.
Taking into account that Iranians are  fond of hot and fresh bread, the faith of so many bread factories built all over the country was unclear and they eventually  failed.

Iranians have their own traditional breads, the most common are: Lavash bread, Taftoon, Barbari and Sangak (whole grain).

Their share in bakeries is: Lavash bakeries (41%), Taftoon (21%), Barbari (25.5%) and Sangak (7%).
